Vrat ke dahi aloo is an excellent recipe made during fasts. When potatoes are cooked in tangy and creamy curd with few spices they are called Dahi Aloo. this is very quick and easy recipe.
Ingredients (4 servings)
- Potatoes – 4 (boiled and coarsely mashed)
- Whole red chillies – 2
- Oil – 1 tbsp
- Cumin seeds – ½ tsp
- Hing – a pinch
- Salt – to taste
- Red chilli powder – ½ tsp
- Sour curd – 1 cup
- Water – 2 cups
- Coriander leaves – 2 tbsp (chopped)
Method
- Beat the curd and add 2 cups water and keep aside. Curd should be at room temp.
- Heat oil in a kadai, add cumin seeds. When they starts crackling add hing, whole red chillies and fry for 10-15 seconds on low heat.
- Add potato, red chilli powder, and mix well and fry for another 3-4 minutes.
- Add curd water mixture, mix well and keep stirring on high heat till it starts boiling.
- Reduce the heat and add salt, mix and let it cook uncovered for another 8-10 minutes.
- Turn off heat and garnish with coriander leaves.
- Serve hot with Kuttu ki Puri.
