Sabudana Kheer

Sabudana kheer is the most common type of sweet and delicious food served on fasting days. This kheer is very easy to make.

Ingredients (3-4 servings)

  • Sabudana or Tapioca Pearls – ½ cup
  • Milk – 750 ml
  • Sugar – 4 tbsp or to taste
  • Green Cardamom Powder – 1 tsp
  • Roasted Almonds Flakes – 2 tbsp
  • Raisins – ½ tbsp
  • Saffron strands/kesar – 3-4 (optional)

Method

  1. Rinse sabudana till the water runs clear of the starch.
  2. Soak in little water for 2 hrs.
  3. In a thick bottomed pan, add sabudana and milk.
  4. Let it cook till it becomes 2/3 rd, stirring occasionally in between.
  5. Add sugar and cardamom powder and simmer for about 5-6 minutes more. Keep stirring occasionally.
  6. Switch off the gas and add almonds and raisins and mix.
  7. Garnish the kheer with saffron strands and almonds.
  8. Serve sabudana kheer warm or cold.
