Sabudana kheer is the most common type of sweet and delicious food served on fasting days. This kheer is very easy to make.
Ingredients (3-4 servings)
- Sabudana or Tapioca Pearls – ½ cup
- Milk – 750 ml
- Sugar – 4 tbsp or to taste
- Green Cardamom Powder – 1 tsp
- Roasted Almonds Flakes – 2 tbsp
- Raisins – ½ tbsp
- Saffron strands/kesar – 3-4 (optional)
Method
- Rinse sabudana till the water runs clear of the starch.
- Soak in little water for 2 hrs.
- In a thick bottomed pan, add sabudana and milk.
- Let it cook till it becomes 2/3 rd, stirring occasionally in between.
- Add sugar and cardamom powder and simmer for about 5-6 minutes more. Keep stirring occasionally.
- Switch off the gas and add almonds and raisins and mix.
- Garnish the kheer with saffron strands and almonds.
- Serve sabudana kheer warm or cold.
