Rice kheer is one of the most popular dessert of northern India. This is made of basmati rice, milk and nuts. It is prepared on festivals or any special occasion.
Ingredients (3-4 servings)
- Basmati Rice – ½ cup
- Milk (full cream) – 1 kg
- Cashew nuts – 8-10
- Almonds – 8-10
- Raisins – 15-20
- Cardamom Powder – ½ tsp
- Sugar – ½ cup or as required
Method
- Wash and soak the rice in water for half an hour.
- Boil the milk in a heavy bottom pan, when starts boiling reduce the flame.
- Add the soaked rice to the boiling milk. Let it cook on slow flame, till the rice is cooked and milk thickens a little. It takes about 35-40 minutes to be done.
- Add sugar and stir continuously till the sugar dissolves, this takes around 8-10 minutes on low heat. Also scrape the sides of the pan and add this dried milk into the pan.
- Add cashew nuts, almonds, cardamom powder and raisins and stir. Switch off the gas.
- Serve hot or cold garnished with almonds.
NOTE:- Remember to keep on scraping the sides and adding the dried milk from the sides in the simmering kheer.
