In Maharashtra raw mango kadhi is also known as “Kairichi Saar”. This can be served with chapati/steam rice. This is little sweet also because of coconut. The sweet n sour taste of this kadhi is liked by everyone.
Ingredients (4 servings)
- Raw Mango – 2
- Cumin Seeds – ½ tsp
- Pepper corns – 8-10
- Onions – 1 cups (grated)
- Ginger – ½ tsp (grated)
- Green chillies – 3-4 (slit lengthwise)
- Turmeric Powder – ¼ tsp
- Coriander powder – 2 tsp
- Garam Masala – ½ tsp
- Oil – 2 tbsp + 2 tsp
- Coconut Milk – 1 cup
- Salt – to taste
- Asafoetida (hing) – ¼ tsp
- Mustard Seeds – 1 tsp
- Whole Red Pepper – 3-4
- Curry Leaves – 15-20
- Coriander Leaves – for garnishing
Method
- Add 4 cups of water in mangoes and boil till it is well cooked.
- Blend the mangoes in the mixer. Keep aside.
- Heat 1½ tbsp oil in a pan, add jeera, peppercorns, onion and stir fry for 3-4 minutes.
- Add ginger, green chillies and stir fry again for 2-3 minutes.
- Add pureed mango, mix it nicely.
- Add turmeric powder, coriander powder, salt and mix.
- Add garam masala and let it come to a boil, mix again and let it cook on simmer for 6-7 minutes.
- Add coconut milk, mix and let it come to boil again.
- Simmer for 2 minutes.
- Now for tempering heat 1 tbsp oil in a pan, add mustard seeds, when it splutters add hing, curry leaves, whole red pepper and red chilli powder.
- Pour the tempering over the kadhi.
- Serve hot Raw Mango Kadhi garnished with coriander leaves.
- Serve with chapati/steam rice.
