Panjiri

Panjiri is made as prasad to offer God in any pooja. It can also be made as a dessert and is very nutritious. It is made from whole-wheat flour fried in sugar and ghee, heavily laced with dried fruits and herbal gums. It is usually eaten in the winters to ward off cold. Panjiri is given to nursing mothers also.

Ingredients

  • Wheat Flour – 2 cups
  • Pure ghee – ½ cup
  • Lotus Seeds/Makhana – 1 cup (cut into 4)
  • Almonds – ½ cup (chopped)
  • Cashewnuts – ½ cup (chopped)
  • Raisins – ½ cup
  • Sugar – 1 cup

Method

  1. In a non stick pan heat the ghee, add the wheat flour and stir continuously on low heat until nice aroma starts coming and the flour turns golden brown. Remove it from the flame.
  2. Add almonds, raisins and cashewnuts to the mixture and mix it.
  3. Let the mixture cool down add sugar and mix well.
  4. Your Panjiri is ready.

NOTE:-It’s shelf life is 40-45 days.
