Kathi roll/Wrap/Frankie is street-food originating from Kolkata, India. Originally it is a kabab wrapped in a roti, although over the years many variants have evolved all of which now go under the generic name of Kathi roll/Wrap/Frankie. Today, mostly any wrap containing a filling enfolded in an Indian roti is called a kati roll. Yummy paneer is rolled in roti made of wheat flour, so it is very healthy and kids too love it.
Ingredients( 4 servings )
For Roti
- Wheat Atta – 1 cup
- Oil – 1 tbsp
- Salt – pinch
- Wheat Flour – for rolling
For Mayonnaise
- Coriander Leaves – 1 cup (finely chopped)
- Green chillies – 3-4 (finely chopped)
- Salt – to taste
- Lemon Juice – 1 tsp
- Mayonnaise – ½ cup
Paneer filling
- Paneer – 1 cup (½ cm cubes)
- Salt – to taste
- Oregano – 1 tsp
- Red Chilli Flakes – 1 tsp
Other Ingredients
- Lettuce – 2 cups
- Bean sprouts – 1 cup
- Carrot – 10 tbsp (grated)
Method
- For Roti
Combine all the ingredients in a bowl and knead into a soft dough using water and keep aside for an hour. - Divide the dough into 4 equal parts and roll each portion into 7-8 inch diameter circle, applying wheat flour while rolling.
- Heat a non-stick tawa, lightly cook the rotis on both the sides. Keep aside.
- For Mayonnaise
Combine all the ingredients for mayonnaise, except mayonnaise and blend in a blender to a smooth paste using little water(if required). - Transfer to a bowl, add mayonnaise and mix well. Refrigerate for an hour.
- Paneer filling
Mix all the ingredients of paneer filling and mix in the mayonnaise mixture, mix well and keep aside. - Roll
Just before serving, warm the roti on a non-stick tawa. - Now place roti on a clean dry surface, and arrange lettuce in the centre of the roti in a row.
- Arrange ¼ paneer filling, ¼ bean sprouts, ¼ carrot over it. Finally spread ¼ paneer-mayonnaise mixture over it and roll the roti tightly.
- Repeat with the other 3 rotis also.
- Wrap a tissue paper or foil around each wrap and serve immediately.
