Methi Chaman

Methi Chaman is a balanced diet for kids as methi, palak and paneer all together are highly nutritious as these have many nutrients and health benefits. Fenugreek is a wonder herb rich in Potassium, Calcium, and Iron. The leaves have good dietary fiber, Vitamin C and Vitamin K. Fenugreek leaves are cooling and relieves flatulence. Spinach is rich in antioxidants, especially when fresh. It is a rich source of vitamin A, vitamin C, vitamin E, iron, calcium, folic acid and many more.

Ingredients(4 servings)

  • Spinach Leaves (Palak)- 100 gms
  • Methi leaves – 40 gms
  • Onion – 1 (puree)
  • Green chilli – 1 (chopped)
  • Tomato – 1 (puree)
  • Potato – 100 gms (cut into small cubes)
  • Shredded ginger – 1 tsp
  • Milk – 350 ml
  • Ghee – 60 gms
  • Haldi – 1½ tsp
  • Salt – 1¼ tsp
  • Coriander powder – 1 tsp
  • Red chilli powder – ½ tsp
  • Garam masala – ½ tsp
  • Jeera – ½ tsp
  • Cloves – 2
  • Bay leaves – 2
  • Green cardamom – 2
  • Mace – little
  • Cinnamon – ½ inch
  • Oil – for frying

Method

  1. Curdle milk, now separate paneer and whey (don’t throw it). To take out excess water from paneer press it under a heavy pan for 1 hour. Now cut it into small cubes.
  2. Fry paneer and potato cubes. Put both in whey.
  3. Wash spinach and methi , grind together in mixer.
  4. Heat a pan, add ghee, when hot add green cardamom, jeera, cloves, bay leaves, mace, cinnamon, half of ginger, green chilli and saute for 2-3 minutes.
  5. Add onion puree and saute till golden in colour, add tomato puree saute till oil separates.
  6. Add spinach methi mixture , saute on medium flame till water dries up.
  7. Add haldi powder, red chilli powder, coriander powder, whey to make it of coating consistency. Add Salt, garam masala, ginger and saute for 3-4 minutes.
  8. Add paneer and potato after squeezing a little. Let it boil once, then on simmer for 4-5 mins.
  9. Serve hot with plain rice.

NOTE:- Saute methi spinach mixture till it is of mehandi colour.
