Masala Vermicelli also called as Semiya (Sevia, Seviya, Sevai) upma is a common recipe made for breakfast. It is very simple, just temper basic spices, saute onion and seasonal vegetables you like. Then add vermicelli, milk, water and cook till done.
Ingredients (4 servings)
- Vermicelli/Sevia – 2 cup
- Ajwain (Carom Seeds) – ½ tsp
- Turmeric Powder – ¼ tsp
- Red Chilli Powder – ½ tsp
- Garam Masala – ¼ tsp
- Onion – 1 (finely chopped)
- Green Chillies – 2 (finely chopped)
- Capsicum – 1 (chopped)
- Carrots(chopped) & Peas – ½ cup
- Salt – to taste
- Oil – 2 tbsp
- Milk – 1 cup
- Water – 2 cups
- Coriander Leaves (Cilantro) – to garnish
Method
- Dry roast the vermicelli on medium heat till it turns light golden in colour, stirring continuously.
- Once done, remove it to a plate to stop the cooking process. Keep aside.
- Heat a pan, add oil on medium heat.
- Once hot, add ajwain and cook for 15 seconds.
- Add green chillies, saute for 30 seconds.
- Add onions, cook for 2-3 minutes.
- Add carrots, peas and capsicum. Mix well.
- Cover and let them cook for 2 minutes.
- Add turmeric powder, red chilli powder, garam masala and mix well.
- Add roasted vermicelli and mix.
- Add milk, water and salt. Mix well.
- Let the water to come to a boil.
- Once it is boiling, cover the pan and lower the heat, cook for 8-10 minutes.
- Now switch off the heat and allow it to sit covered for another 5-6 minutes.
- Open and fluff it gently.
- Delicious masala vermicelli is ready.
- Garnish with coriander leaves.
- Serve hot.
