Fried rice is a dish of steamed rice stir-fried in a pan with vegetables. It is sometimes served as the penultimate dish in China, just before dessert.
Ingredients(4-5 servings)
- Basmati Rice – 2 cups
- Cabbage – ¼ cups(finely shreeded)
- Onion – ¼ cups(cut into long thin strips)
- Carrot – ½ cups(cut into long thin strips)
- Capsicum – ¼ cups(shredded)
- French Beans – ¼ cups (cut diagonally into long thin strips)
- Spring Onions Whites – ¼ cups(chopped)
- Spring Onions Greens – ½ cups(chopped)
- Green chillies – 2 (finely cut)
- Salt – to taste
- Soya Sauce – 3 tsp
- Refined oil – 6 tbsp
- Vinegar – 2 tbsp
Method
- Soak rice for 1 hour. Boil in 4 cups water. Add 2 tbsp oil and salt while boiling. Rice should be ¾th cooked.
- Heat 4 tbsp oil in a pan.
- Add green chillies, onion, carrot, french beans, spring onion whites, cabbage, capsicum and saute on high flame for 5-6 minutes. i.e till the vegetables are half cooked.
- Sprinkle little salt.
- Add rice, spring onion greens, soya sauce, vinegar.
- Mix well and saute again for 3-4 minutes.
- Serve hot with tomato sauce and chilli sauce.
