Daal known as panchmel daal is cooked with spices and ghee is mixed into it before serving. Daal-Baati-Churma is one of the popular dish of rajasthan. Rajasthani food is incomplete without the mention of the famous Daal-Baati-Churma.
Ingredients (5-6 servings)
- Arhar Dal – 1 Cup
- Moong Dal – ¼ cup
- Urad Dal – ¼ cup
- Chana Dal – ¼ cup
- Whole Moong – 2 tbsp
- Turmeric Powder – ½ tsp
- Salt – to taste
- Ghee – 2 tsp
- Cumin Seeds (Jeera) – ¼ tsp
- Red Chilli Powder – ½ tsp
- Asafoetida (Hing) – a pinch
- Peppercorns – 8-10
- Cloves – 4-5
- Bay Leaf – 2
- Fresh coriander Leaves – 2 tbsp
Method
- Wash and soak all the daals for 1-hour.
- Add all the daals and 5 cups of water in a pressure cooker, add turmeric powder, peppercorns, cloves, bayleaf, salt and let it pressure cook till 2 whistles. Then let it cook on simmer for 10-15 minutes or till done.
- Heat ghee in a pan, add hing, jeera and red chilli powder and pour it on the daal.
- Garnish with fresh coriander leaves.
- Daal is ready to be served with Baatis and Churma.
