Corn Methi Rice

Corn Methi Rice is very delicious dish which combines the sweetness of corn and the bitterness of methi and is even loved by children.

Corn Methi Rice

Ingredients(4-5 servings)

  • Basmati Rice – 2 cups
  • Onion – 2 (sliced)
  • Green chillies – 2 (chopped)
  • Sweet Corn kernels – 1 cup
  • Methi (Fenugreek) Leaves (chopped) – 1¼ cups
  • Salt – to taste
  • Refined oil – 2 tbsp
  • Black Pepper Corns – 10-12
  • Cinnamon – 1 inch
  • Black cardamom – 2
  • Cumin Seeds – 1 tsp
  • Cloves – 5-6
  • Turmeric Powder – ½ tsp

Method

  1. Heat oil in a kadai, add cumin seeds, peppercorns, cinnamon, cloves and caramom and saute on a medium flame for a minute.
  2. Add the green chillies, onions and saute on a medium flame for 2-3 minutes.
  3. Add the methi leaves and sweet corn and saute on a medium flame for 2-3 minutes.
  4. Add the rice, salt, turmeric powder and 4 cups of water and mix, cover the lid and cook till the rice is done.
  5. Serve hot with curd.
