Corn Methi Rice is very delicious dish which combines the sweetness of corn and the bitterness of methi and is even loved by children.
Ingredients(4-5 servings)
- Basmati Rice – 2 cups
- Onion – 2 (sliced)
- Green chillies – 2 (chopped)
- Sweet Corn kernels – 1 cup
- Methi (Fenugreek) Leaves (chopped) – 1¼ cups
- Salt – to taste
- Refined oil – 2 tbsp
- Black Pepper Corns – 10-12
- Cinnamon – 1 inch
- Black cardamom – 2
- Cumin Seeds – 1 tsp
- Cloves – 5-6
- Turmeric Powder – ½ tsp
Method
- Heat oil in a kadai, add cumin seeds, peppercorns, cinnamon, cloves and caramom and saute on a medium flame for a minute.
- Add the green chillies, onions and saute on a medium flame for 2-3 minutes.
- Add the methi leaves and sweet corn and saute on a medium flame for 2-3 minutes.
- Add the rice, salt, turmeric powder and 4 cups of water and mix, cover the lid and cook till the rice is done.
- Serve hot with curd.
