Bruschetta with Tomato and Basil

Bruschetta (Pronounced “bru-sketa”) is a fresh, simple, and delicious Italian appetizer that can be prepared in minutes and enjoyed any time. In its simplest Italian form, bread is toasted over real coals, then rubbed down with slices of raw garlic, drizzled with olive oil, and finished with a little bit of sea salt and fresh pepper.

INGREDIENTS (4 servings) 

  • French loaf bread – 1
  • Olive Oil – 4 tbsp
  • Mixed Herb – ½ tsp
  • Tomatoes – 4
  • Fresh Basil Leaves/Dry Basil – 15 leaves / 1½ tsp
  • Garlic – 1 cloves minced
  • Salt – ½ tsp or to taste
  • Black Pepper Powder – ¼ tsp
  • Oregano – 2 pinch
  • Lemon Juice – 1 tsp
  • Sugar – ½ tsp

INSTRUCTIONS 

  1. Blanch the tomatoes.
  2. Cut the tomatoes into small pieces. (discard the seeds)
  3. Chop the basil leaves finely.
  4. In a deep bowl add the chopped tomatoes, basil, garlic, salt, black pepper, oregano, lemon juice, sugar and mix well.
  5. Let it rest in refrigerator for an hour.
  6. Preheat the oven at 220°C.
  7. By this time, In a bowl add olive oil, salt, mixed herb and mix well.
  8. Cut the loaf in 12 diagonal pieces.
  9. Apply the olive oil mix on both the sides of the bread pieces.
  10. Bake the bread pieces in the oven for 8-10 minutes at 220°C.
  11. While serving, gently top each baked bread slice with some of the tomato mixture.
  12. Enjoy 🙂🙂
