Beetroot Fry

Beetroot fry is very healthy. Beetroot is good for boosting stamina and making muscles work harder. It contains potassium, magnesium , iron, vitamins A, B6 and C, and folic acid as well.

Ingredients (4 servings)

  • Beetroots – 4 (cut into small pieces)
  • Onion – 1 (chopped)
  • Tomato – 1 (chopped)
  • Oil – 2 tbsp + 1 tbsp
  • Ginger Garlic Paste – 2 tbsp
  • Chilli Powder – 1 ½ tsp
  • Salt – to taste
  • Water – 2 cups
  • Curry Leaves – 8-10
  • Coriander Leaves – 1 tbsp

Method

  1. Heat oil in a cooker, add ginger garlic paste, onion, saute for a minute.
  2. Add Tomato, chilli powder, salt and saute well for 4-5 minutes.
  3. Add the beetroot and put the water. Pressure cook it for 15-20 minutes.
  4. In a kadai add 1 tbsp oil and curry leaves.
  5. Now put the beetroot mixture and fry till all the water evaporates.
  6. Garnish with coriander leaves and serve hot with rice or chapati.
