Beetroot fry is very healthy. Beetroot is good for boosting stamina and making muscles work harder. It contains potassium, magnesium , iron, vitamins A, B6 and C, and folic acid as well.
Ingredients (4 servings)
- Beetroots – 4 (cut into small pieces)
- Onion – 1 (chopped)
- Tomato – 1 (chopped)
- Oil – 2 tbsp + 1 tbsp
- Ginger Garlic Paste – 2 tbsp
- Chilli Powder – 1 ½ tsp
- Salt – to taste
- Water – 2 cups
- Curry Leaves – 8-10
- Coriander Leaves – 1 tbsp
Method
- Heat oil in a cooker, add ginger garlic paste, onion, saute for a minute.
- Add Tomato, chilli powder, salt and saute well for 4-5 minutes.
- Add the beetroot and put the water. Pressure cook it for 15-20 minutes.
- In a kadai add 1 tbsp oil and curry leaves.
- Now put the beetroot mixture and fry till all the water evaporates.
- Garnish with coriander leaves and serve hot with rice or chapati.
