Aloo Gobhi ki Subzi

Aloo gobhi ki subzi is an all time favourite combination. In this potato and cauliflower are seasoned with typical Indian spices, ginger and green chillies. The flavour of the garam masala and the dry mango powder makes it more tasty.

Aloo Gobhi ki Subzi

Ingredients (4 servings)

  • Cauliflower – 300 gms
  • Potatoes – 2
  • Ginger – 1″ (chopped)
  • Fresh Coriander Leaves – 2 tbsp (chopped)
  • Cumin Seeds – ½ tsp
  • Asafoetida – a pinch
  • Turmeric Powder – ½ tsp
  • Red Chilli powder – 1 tsp
  • Mango Powder – 1 tsp
  • Garam Masala Powder – ¼ tsp
  • Salt – to taste
  • Cooking Oil – 2 tbsp
  • Cumin Seeds – ½ tsp
  • Asafoetida – a pinch

Method

  1. Wash and soak cauliflower florets in salted lukewarm water to remove the worms if any.
  2. Peel and dice potatoes in medium size pieces.
  3. Heat oil in a pan and add cumin seeds and asafoetida.
  4. When seeds start crackling add ginger, saute for 15 seconds.
  5. Add turmeric powder and potatoes, saute for a minute, cover and cook for 2 minutes.
  6. Now open the lid and add cauliflower and salt, mix and saute for a minute.
  7. Now cover and cook on slow flame for 7-8 minutes or till nearly done. Keep stirring in between.
  8. Add red chilli powder, mango powder, garam masala and let it cook uncovered for a minute, stir in between.
  9. Add chopped coriander and serve hot.
